Skillet Breakfast Bagel Sammich

Skillet Breakfast Bagel Sammich
Change of plans today. We we're supposed to spend the weekend in Jersey, sorry ( Joizey ) with my bro but last night it went from a drizzle and 65 degrees to a heavy downpour and below freezing in no time.
This morning it was 11 degrees with the roads covered in ICE !
Now, it's snowing so I guess to play it safe, we will plan another weekend.
Have a few things to cook for the week today, so since I need motivation I figured I'd make us breakfast. I asked the wifey what she felt like having and she replies...
Over easy eggs on a Everything Bagel with Bacon and Ketchup ( Catsup ) ?!
So instead of using the Black Stone, ( which I can't anyways in this weather ) I grabbed our trusty old tabletop skillet and whipped up some Thick Tater Discs with S&P, fried some Thick Cut Smoked Bacon, Toasted some Everything Bagels, and some White American Cheese.
Topped with the red tomato stuff above and that was all she wrote...
Grrrrrrrr, now I'm more tired than I was before I ate.

Looks like a great breakfast! The pictures themselves are awesome (I need a better camera. Lol!) This is a meal my wife would enjoy, as she also likes the everything bagels.

I think that the 1/4" taters put it over the top. The bacon wasn't too bad either :):)
I wanted Srirachi on mine, but I left it out last night by mistake.
I don't think it needs refrigeration, but it's been in the fridge for months prior to taking it out so idk if that matters ??
