OK, so I'm overdue for a pot of Gumbo - - - - I've even got some Holy Trinity in the Freezer awaiting - - - - but then I see this Magazine Perfect Pic Roux and realize that I'm still in school with the Dunce Roooo Cap on.

Yumm. Gumbo sounds great, but I am one of those guys that does the gumbo with okra and that stuff is so expensive right now I'll have to wait. That look fab though. :chef: :chef: :chef:

I too use da Okrie and sometimes I just break down and get some canned maters and okra and call it "Gamble Gumbo" :whiteflag:

We like okra in our gumbo but only if it is chicken okra or shrimp okra gumbo. I cook it down on my BGE with tomatoes, onions, green onions, and garlic then freeze in 1# portions to be used later. Frozen okra is another option when you can’t find fresh.
