I am a retired chef and now in my spare time I want to make sausage's
My son got me a electric smokers which is nice but I want to make my own
I live on top of a mountain so I thought I build smoke house at top and go down the incline and put a fire put with pipe up to smoke house my grandfather had something like this when I was a kis

BTW I like your thoughts on the smoker/not cooker that's the deal for sausage (or cheese or fish etc.)
