First tri tip

Postby JustinCouch » Sat Oct 07, 2017 1:40 pm

I had the wife pick up a tri tip at SMS club and if the rain holds out we will be having it for supper. Now the questions are is this a smoker or grill cook? I think you are supposed to indirect them until around140our so then reverse sear to protection. Please give me all the advise you have.

Justin, I've only done one and I used the Capt'ns method and it was PERFECT. I found his Thread but the pics were from Photobucket and we all know what that means. Here's his instructions from that thread:
Tri-tip indirect/reverse seared
over a water pan to 115°
then reverse seared to 125°

to setup for the reverse sear i put a 4"tall foil pan upside down
with a 3"deep foil pan on top of it
then i put the coals from the indirect in the top pan
this puts the coals about 3½" under the grill/food

A storm rolled through here last night so I didn't get to grill the tri tip. Here are s few picks of it still in the cryovac.

Don't know if you've already gone there yet, but recommend the grill for this definitely. And I haven't done one in a while but I used to use a bourbon+butter+rub flambe on it to get a nice crusty char.

It was good but it was already seasoned. It was very overpowering. It wad packaged in something like Italian dressing and pepper corns. I will try to find an unseasoned cut next time. That being said i can't wait to try another one.
