Chile relleno!

My fist time making these. The batter was fun.. Nothing but eggs. Separate the yolks from the whites then beat the whites almost to stiff peaks, then beat the yolks almost to mayonnaise, then fold the yolk into the whites. Anywho.. Roasted the pablanos in the oven then let steam a bit in a bowl to remove the skins. Stuffed with sharp cheddar then battered and fried. Topped with a simple tomato, onion, cilantro sauce and made up some refried beans to go along with. Good stuff!!
