Chuck shorts!

Had a recent knee surgery and have been down a few days so since today is my last day of medical leave from work, decided I'd get some chuck short ribs on the smoker before I go back to work tomorrow!
Simply dusted with some coarse sea salt and black pepper. Gonna smoke these with cherry chips in the masterbuilt. I love the pork ribs this thing produces, can't wait to see how these turn out!

Yes and no. This was a butcher shop recommended by one of our suppliers. The shop will sell to the public but in bulk, not really your regular "walk into and order a steak" place. They did give me a great price and I didn't have to buy bulk since it was a word of mouth referral and because we can potentially conduct business with them in the future. Lol!
This is a better shot of the meatiness.. They are the thickest I've come across here locally, and this slab was only 20 bucks.
