pellet/roasted butt
a butt started in the pellet cooker
on a wire rack in metal pan from the beginning
to collect all of the drippings from the beginning
one of the tricks is to make foil balls to raise the rack higher off the bottom
to keep the butt's butt out of the drippings
when the butt hits the stall at 160°
just set the whole pan in your roaster and finish in the oven to 200°
this keeps the mess / clean up small
then pour off the drippings and separate the fat
then pour the drippings back over the pulled pork

Nice, Capt'n - - - after mine spent 3 hours in my Oven, I should have just started it there and forgot the smoke flavor - - - or maybe used "liquid smoke" DUCK QUICK IN COMING INSULT :banghead:

OUP - seriously
just start it in a metal pan with a rack from the beginning
when you get bored with it in the pellet/smoker
just move it to the oven with foil over it and finish
if you are just going to cover it with foil in the pan from the pellet/smoker
put it on an oven sheet pan to keep the condensate from dripping down in the bottom of the oven
but it is the easy way Image
..and you get all tha' drippin's to separate - to pour back over it when you get it pulled ;)

It was my fault, Capt'n, I should have never put it bare on the grates for 8 hours on the Pellet Pooper - - - I should have used a pan and ?maybe? after 90 min of 'bare" pellet smoke and then finished it however was "convenient" :salut:

Alas, it's true. And I mean RUIN. It was decades ago, our first BBQ unit, and first butt.

Ain't ruined one since, though! ;)

It was the first time I used the ECB (without any mods either). It came with a BIG chunk of wood that I threw in the coals for my smoke. It was quite a bit too much. :banghead:
