If I started thinking about what I'd done in the past, it could certainly conjure up some rapid heart beats - - - SOOOO I don't think about those "DAZE".

According to da Wiffy, mine are so recent they don't even need Shelf Life - - she keeps them freshly stirred.

I have had something similar. Looks awful light on seasoning to me. Anxious to see how it turns out.

Wellllll....this is what we did.
Here, a sugar/pepper fatty, done with apple smoke on the Weber kettle (and never again, taste is good but fat 'n' gristle didn't have time to render, so interior still pink and gristle still gristly).
Now, our own Carmen and Gypsy peppers scorched on the leftover coals:
And, Italian sausage, also done with sugar/pepper, but didnt stick due to the casings, so next time, a mustard or mayo rub. Beans 'n' pepper on the side, and the Last Hurrah of our summer plates this season.

The Italian Sausage came out better than the Fatty. The Weber was running 250 - 275 degrees so everything cooked a bit too fast. Next time, I'll go back to the ECB, which can give me 225 degrees easily.

I was thinking the same thing myself and turned out we were both correct. Tasted very plain so I made up a nice Hawaiian sauce or at least what I perceive might be Hawaiian and mixed it all up and it wasn't too bad. Not worth doing again. After searching for banana leaves forever it definitely wasn't worth it. My little girl told me when I was trying wrap those pain in the butt banana leaves, "why don't you just do it the normal way so it will taste good?" and she couldn't have been more right.
