Hi everyone.
I'm an ex-Texan, used to live north of DFW, now in Rio Rancho, NM.
PapaTom is a good friend and he recommended the forum to me.
I do my BBQing on a Memphis Elite pellet grill (built-in) and have a wood fired pizza oven for pizza and one day when I'm brave enough, I'll try making bread in it.
Currently make bread in the grill.
Latest project was making pastrami (first attempt). Wasn't the best of briskets, but I think the sandwiches will be OK tonight.
Hope to learn while I'm here (always room for that) and contribute where I can.

welcome to the forum. i used to live in Albuquerque. was there from 00-04 and again from 08-12.
did you get some fresh green chile this year?

Isn't Green Chile the reason people move to New Mexico?.
Got one case last year and ran out, so we got two cases of roasted this year.
Have not done any comps. My BBQ equipment is built in to an outdoor kitchen.

Ah, yes, Rio Rancho, famous as the home of EL PINTO, the home restaurant of the Salsa Brothers from the Griggs Family, originally of El Paso Texas. "The Bean" is one of my favorite Mexican places in all the world, I can feel my forehead beading up from the slow burn just thinking about it. My wife's family used to eat at the original Griggs over on the west side of El Paso all the time, great food. Shame the old feller passed back in the early Oughts, but the cousins or nephews (I forget which) at "The Bean" are certainly holding up their end. You fellers would do well to darken their door, and offer to stand our new friend here "Ought-6" a beer over a plate of authentic flat earth enchiladas. This place is on Boots' "No. 1" list.
All here: They also make and sell a really great salsa you can get shipped to your or at some grocery chains, and I understand they make "red chile ribs" now:
"Famous Red Chile Ribs Half Rack - 17.99 / Full Rack - 21.99 - Our signature baby back ribs were named by the Food Network as the #3 Ribs in America. The ribs are marinated in red chile and slow baked to fall off the bone. An El Pinto original recipe and favorite. (Full Rack Serves 3-4) Add a side of slaw for 2.09."

I'll let you folks in on a little secret. This guy made the best pizza (from scratch) I have ever had on his pellet cooker.
Now he's got a gen-u- wine made for it wood burning pizza oven it just can't get any better.
Maybe he'll share some pix of his uber patio kitchen......
