Hatch stuffed pork chops

I roasted a few bags of hatch chilis about a month ago and have several bags in the freezer now. I've been looking for a way to use them and saw some thick pork chops and thought I would try that.

I cut a pocket and stuffed them:

Rubbed with hog Waller :

Had smoker at 240with peach wood:

Mopped with sucklebusters peach and pulled at 147 degrees. Took right under 2 hours.

I served with shaved Brussels sprouts and more pork bacon:)

Results? Pork was spot on with those flavors......pulling at 147 was perfect in my opinion- moist and smoky....I feel I need some tweaking on this one....better technique stuffing and more imagination on the stuffing- it needed more than one item to be really really good- ideas?

I love to do stuffed pork chops and usually do mine with a seafood type stuffing but now I'm considering using some of my Roasted Hatch Salsa so thanks for the Idea - - - as far as suggestions goes, I'm thinking that stuffing may need some lightly sauteed own-yawns and maybe even some cilantro but that would be a taste preference since some don't like it :dont:
