I've got two spatchcocked birds that have been brining alnight. One to be munched one and one for chicken salad. What do y'all have today?

right now, at this moment I have the hongries for some of dat sheeken yer fexin - - - but later on I'll be chicken frying some chicken breast in some Wild Bill Batter - - - sides of yeller crooked neck squash, cream gravy and wiffy's fixing skillet fried taters and own-yawns (or so I was told) :salut:

not hawg'n in but since you brought it up - - - I can't wait to try my first time with the second of 3 breadings that Wild Bill gifted me with last month. This time it's the Chicken Breading and not the Cajun Seafood (which I've used twice with great satisfaction). I'll be double dredging the breasts in this dry mix and an egg/milk wash. Can't wait to git'er done. :tup: :chef:

Just lit a chimney of b and b lump. Got to get the birds out of the brine now. Sprinkled the Cornish hens with cavenders Greek and I will do the same with these birds.

Great news. I removed the makeshift tuning plate I made for my offset and raised the grate in the firebox. This thing is really drafting now. The lump coal must be helping.

One more and I'll get outa the way. Lunch was ?OK? but two cooks at the stove at one time is not the way. Used Wild Bill's Chicken Breading as mentioned above and found out that there's a learning curve because I almost over cooked the chicken breasts when doing it the same way I do regular Flour. Wiffy did her white tater/own-yawn fry and man do we have a lot of taters left over. Nuke Squash was just in the Frig and needed cooking. Uneventful Lunch but the hongries is gone now.

Well I haven't tried them yet but they look great. I tell y'all what, removing that heat deflector really changed the way this thing cooks. The lump coal worked great. One problem I had was my coals fell through the grate in the fire box. I am going to have to make an expanded steel basket so the coals don't fall through.
