I'm at Sam's looking at some brisket flats. How long do you smoke them.

Buy a whole packer, flats are hard to cook and not dry out.

Can't give a time, all are different. Anywheres from 7 to 14 hrs will be a safe answer from me. I never rely on temp or time. Pretty much everyone will agree on tenderness as a goal.
If u can stick ur temp probe in and out like a hot knife in butter you should be golden.
I've had these pulled and wrapped anywheres from 195-215 but that's just my opinion. I've only done a half dozen or so, so I'm no Brisket expert.
