Paella for my Family

Paella for my Family
Loving the days/weekend's we can spend time with family. Have my Mom and Nephew up for the weekend, and wanted to make a special dinner for them and Deb. ( Didn't do the Seafood test yet for the little guy )..
Decided on Bomba Paella Rice, Spanish Chorizo, Skinless Thigh Chunks, Fresh Sea Scallops, Fresh Jumbo Shrimp, Lobster Tails Cubed Up, Dungeonous Crab Clusters, Green Shell New Zealand Mussels, Clams -- ( steamers, the REAL ones with the neck ) Spanish Smoked Paprika, Saffron Threads, Onions, Garlic, Salt, Pepper, Chicken Broth, Fresh Parsley and Lemon Wedges all over Lump on the Akorn.
The verdict --
Only a few ladles left from a 15" Paella Pan

Those pics get me drooling, wife would never eat that, I would though, in a heartbeat. You live well, nz mussels are good eh? I do mine in stir fry, the mussels are grown on barges in the pelorus sounds, when we fish up there we fish by the barges, that's where the snapper are. Your guests must have thought they were in Italy? Food and family......doesn't get better, britches hasn't done the seafood test yet?

I haven't had a chance to try paella. Seen it on the food shows. Yours looks great!

Yup, the family loved it.
This was my very first attempt at Paella and I'm pretty happy with it, the only thing I will do next time differently is crank the temp up to 600 instead of 400 for the last 15 minutes to set the Soccarat a bit more. The rice was amazing, but I wish it had just a bit more crust.
As for Evan, we won't give him seafood yet until we're near a hospital,allergic reactions scare the you know what out of us so untill we know he's not allergic we won't chance anything.

I've seen rick stein make that dish as well, he reckons the base should be crispy. Not enough seafood lovers near me to try to make it.

I was gonna throw my hat in the ring with it, but the timing chain was off a tooth and wanted to make sure I made it when I did last night.
As for the entries, mine wouldn't stand up next to them, I saw them and there is alot of thought behind them so kudos to all of you, awesome jobs !

You sound like my wife and Mom. When they asked what I was making I told them it was a surprise and them my Mom saw the Paella Pan and her eyes looked like saucers, lol !
Then Deb saw it and got all excited, my nephew never had it before and now he's hooked too.

Let me suggest a few things ok ?
Get urself a Good Paella Pan. You can do it in a fry pan or cast, but I promise you that a Paella Pan is more efficient and more versitle. Check out this site.

I bought mine from Amazon, a 15" carbon steel ( with the heat dimples ) . It's the Hungry Cuban Paella Pan about 30$. I use it for just about everything.
Also, use a good spanish smoked paprika and a good Paella Rice like Bomba.
