Pork Booty that Barked at the moon

I see a lot of pork butt lately and that too is what I did this weekend. I will state that I don't mop or spritz anything except pork booty. In the stumps it is just sealed so tight it is a very moist environment, without a waterman. The only thing I wrap is ribs. Back on point. The reason I choose to mop is for bark. I use a commercial mop...Stubbs mopping sauce.....it is loaded with spices, vinegar and whatnot. fairly thick for a mop.....it keeps adding layers of bark overtime you mop. Same process as many here:

rubbed with mustard then let it take a nap for almost 24 hrs as it turns out in a rub:

chute is full of charcoal and added some post oak and peach wood :

placed a 7.8 lb booty on....my smoker was running great at 226 so I left ol blue alone to do her work.......I checked on it after 2 hours.

looked like it was ready to mop: so I slopped the mop:) pigs love the slop they say.

This was about 155......lookin good so mopped again:

I pulled it at 192.......black as midnight on the outside- shrunk in size considerably - I had a TOUGH time getting it off the smoker it was so tender it was a 2 person job to keep it from splitting.

Smoky, juicy ....goodness on the inside - I like to chop up the bark and disperse it throughout the pulled pork so it flavors it all when you take a bite.... Good stuff. Probably nothing new here - but it was fun and came out really good. just a version that is not wrapped and mopped instead of sprayed.

Grab urself some Sucklebusters Hog Waller Rub AND a few bottles of Sucklebusters Peach Sauce for your mopping.
I think the rub & Peach will go GREAT with that booty you smoked up !!

Wonderful. I like the amount of bark so when you pull it every little bite gets some. I don't think anyone could ever hope to do better. I'd take a sandwich anytime it was offered, "accidently" drop the last bite on the ground as an excuse to make another. :happ: :happ: :happ: :happ: :happ:

Thanks - I just ordered some hog waller and the peach sauce and have them in the cabinet - I love trying new stuff - Sucklebusters gets rave reviews here so i ordered quite a few things......appreciate the recommendation - something about peach sounds really good with pork - I use peach wood often so why not.
