Stuffed Peppers Fajita Style

Not much time lately to make some grub like I wish I could, so tonight I grabbed some Sweet Peppers and stuffed em up with some Sauteed Clucker Dust Chicken Breasts in the Cast with Diced Oregano, Garlic and Basil Tomatoes. Sauteed some Fresh Garlic, Onions, Pinto Beans, added Chicken Broth, Quiona, Cumin, Smoked Paprika and 5 Cheese Pizza Mix.

Pretty tasty Sunday night here :D

Thanks man. I think next time I'm gonna add more cheese to the inside mix as well. Plus, I might throw them on the lump for some char, just pressed for time this go round.

I myself have to watch peppers myself. I think the addition of the dairy helps some tho to be honest. If I were to just eat raw peppers, I'd be acting like ( Booger ) & ( Oger ) from Revenge Of The Nerds ( minus the nose picking )....

I never thought of a mix like that for stuffed peppers; here it's usually just chopmeat 'n' rice, or a chopmeat/sausage mix.

I experience the same Carnage with Penners unfortunately.., but then again I've always been backwards :)

Thanks, but I can't take credit for the idea. Just copycatted it from the Webb, needed something quick last night and they were pretty good.
Gonna do leftovers tonight when ( if ) I get home from work but will add more cheese in the middle before it gets NuWaved

I think next time I'll use these ingredients but use jumbo Bella's instead of the peppers :):)
I was never a rice fan, and this was the first time ever we ate Quiona......and probably the last lol !!
It reminds me of bird seed wayyyyy too much and the texture is....well.....for the birds !

Never an end to WV-inspired dishes, and we had to try this.

Pinto beans, picante sauce, and leftover Beer Can Chicken. Some SB Hoochie Mama, green onyawn, hot sauce, and parm chez mixed all together. But the peppers we grow aren't great for stuffing, so we charred, seeded, and peeled the char. Gave a nice, smoky flavor, stirred into the other ingredients.

Topped with chez, served with green salad.

Would also make good enchilada filling. There's always lots of inspiration on this forum, but we never made a 'copy' as quickly as we made this.

That looks STUPENDOUS !!!

I'd grab some hard shell taco shells and stuff them to Oblivion with that mix :mrgreen: :mrgreen: :mrgreen:

I like to surf the web for new ideas, and sometimes alter the recipes a bit.
This stuffed peppers recipe wasn't mine, but it's ok because it was delicious so we lucked out :P
