Emil's 6S sausage

I have not seen this recipe or method elsewhere, so I thought I would share.

This is a portion of my first smoke on my new smokertoday, though I have done this particular recipe many times.

Years ago at a sheepdog trial, the host had slices of what looked like summer sausage. It was delicious. I asked what it was. It turned out to be Super Secret, Super Simple, Smoked (breakfast) Sausage.

Take your favorite breakfast sausage, roll it in brown sugar and medium to coarse black pepper. Then smoke it until it shrinks and is relatively firm. I do not have any fancy numbers for those that cook by gauges and clocks. It will go through a "juicing" period where fat is seeping (2 hours ?). I cook it usually 30 minutes or more beyond that at about 220. I have smoked it as long as 5 hours. Be sure it is firm before serving.

It will flatten at first, so rolling it occasionally helps with shape.



Slice to 1/4 inch and enjoy!

YIKE - - - - A MUST DO :tup: :salut: especially since it's my very favorite Breakfast Sausage - - - I could live on Owens Hot - - - think I'll do it in the Pellet Pooper with Brown Sugar and Suckle Busters Campfire Steak Seasoning - - - - it ROCKS with awesome Cracked Pepper taste :cheers:

Unfortunately for me, it generally outshines my other meats. It is a crowd favorite.

Note that it can be cooked hotter and faster than I do.

That's our go to sausage for fatties, abt's, and biscuits and sausage gravy. None better. :chef: :chef:

Very interesting.

OUP - not saying it won't work but be careful adding anything with salt. Given the sausage already has salt in it I can see it being over salted real easy.

as soon as Harvey gets outa here, I'm getting me a couple of rolls and trying this one - - - these could even be good "gifts" for certain folks at certain times :dont:

I can't believe I'm seeing ur post!?!?
I've done this with Andouile and served it with French Toast and Pancakes.!

I myself omitted the flapjacks, I'm not a fan of them. BUT, it goes great with French Toast.
I'm not sure how much of a difference there is, but I seem to like the Dark brown sugar over the light brown.

Thank you for bringing this up, it's been WAYYYY too long.

The arrows show examples of the previously mention seepage, meaning the center is getting hot.
