I think I like these better than the brisket on the first go-around. Assuming you actually have any leftover brisket, here is a great way to enjoy it later.
For two tacos (adjust recipe as needed):
1.5 cups chopped brisket (I like to use the point for this)
2 Tbsp chopped pickled onion *(see below)
2 Tbsp your favorite BBQ sauce
1/4 tsp ground black pepper
1/8 tsp ground cayenne pepper (or to taste)
2 warm flour tortillas
Mix the first 5 ingredients together in a bowl, then nuke it for about 1.5 minutes. Spoon into the warm tortillas, roll 'em up, and eat 'em up.
* When I say pickled onion: I slice onion and let it sit in a bowl covered with 50/50 vinegar and water for at least 2 hours. I make this when my brisket is cooking the first time. Whatever is leftover, drain, and keep in a covered container in the refrigerator. It will keep at least a week.
