Good luck indeed!
You might think about placing that temp probe next to instead of on top of the meat, your reading will show the chilled meat temp instead of the cook temp.
You can stick it through a potato and set the tater next to the meat..

The probe reads at several spots, I can select on my screen...i am only using it for the tip reading.

Looking great already! I kick myself in the rear as I have no beer today. Where I live, no alcohol is sold on sunday with the exception of at the restaurant. I wanted to stop and grab a couple beers for this evening's cook and forgot it was Sunday. :(

Bummer. We have early liquor hour sales too...but sell 7days a week. This is my drink today...pool smoker beer...repeat.

Back on topic....i chose not to wrap...is it normal to hit a stall at 150-155....ive been stuck here forever. Image
