First it was oven fried catfish, then oven fried pork chop's and now oven fried skinless chicken breast. I cut the breast in half, tenderized/smashed them down thin, dipped in a buttermilk egg wash and rolled in panko/breading mix with a little Tony's and black pepper. Baked at 425 for about 30 minutes, turning them over once and I got to tell you that I'll do it again, they were good. Think I'll be having a chicken sandwich for lunch today.

The pic makes it look a little dark but it's cream gravy on the chicken and mashed potatoes, also a green salad with thousand island dressing and croutons.
