Diablo Delima a la Redneck
The wiffy is feeling poorly so Lunch will be strictly for my nourishment and I DON'T WANT to eat out. Hmmmm what to do what to do I had some nice tender pieces of Quail Breast meat left and they were headed for Tacos or the Garbage. Then my Redneck Creativity kicked in and I thought ?why not do them Diablo style ?(or should I say Sooner style?) BUT I found out quickly that the meat was too soft and floppy to wrap and stuff like a C.D. - - - soooo I stared at them for about 30 minutes and the initials ABT came to mind Why not just make ABTs with the breast pieces So that will be "dinnah" today.
1. half and clean out large jalapeno peppers then place a piece of quail breast in the cavity
2. put slice of pepper jack chez on top
3. sprinkle with Suckle Busters Hootchie Mama
4. wrap each with a slice of HEB Original bacon and secure with WILLIE-PINS (cool word eh?)
5. place in frig and wait for LUNCH (another Willie suspense technique)

they are larapin, Justin, and you can pretty much use any filling you want PLUS you can make them less Spicy with a good washing and scraping of the seeds and veins of the pepper - - - Good Luck and Enjoy
