Hi TX BBQ Forum,

I'm writing you from the Centennial State of Colorado. I've been reading the public posts and figured I would join up with what seems like a great BBQ forum. I hope to learn and share tips about BBQ smoking a mile above sea level. BBQ smoking at this altitude (5400 feet) is different with longer cook times and water boiling at 202 degrees (10 degrees less) compared to sea level. In any case, glad you guys exist and I'm happy to join!

Howdy :texas: and Welcome, COQue, I spent several wonderful years in Summit Co. Colo at 10,000' and I do know about "high attitude Cooking" - especially when you can almost drink boiling water and a pot of beans requires a pressure cooker or 4 days. :whiteflag:

I knew I'd have me a nice introduction here. I wish we had something like a Colorado BBQ Forum but there's just not enough of a following. Hence, I'll be THAT GUY milling about the Texas one.

Very happy to know there's a community of BBQ devotees, even though it's a couple states away!

to know.. a 3rd of Colorado used to be in the Republic of Texas 1836~1845
where you live might have been in Texas ;)

Sure enough, my location is within that swath of the former Lone Star Republic :)

Great history. Colorado joined the Union in 1876; hence the name Centennial State!

Muggy is right. I was stationed in Pensacola when I was in the Navy. I understand 100 degree, 100% humidity days because we used to have to run in formation in it. Even though I'm a Yankee by birth, I developed a taste for Que when I was down south. Now I can't live without it and I've brought it with me to the mountains!
