I managed to squeek by with a decent Roux and the other ingredients were decent also but my Gumbeaux pot liquor turned out oily and thin :dont:
HOWEVER IT WAS VERY VERY TASTY and I'm dishing up a second Bowl over some Mahatma after I post this. :tup: :cheers:

thanks, Capt'n, I thought about doing mine in the oven especially after I'd stirred it for 30 minutes or so :laughing7:

YUP, I think I've stirred my last batch for sho and I need to get something besides Canola - - - can you just buy bacon grease ? :laughing7:

Debbie's parents did some major gumbo cooks for fund raisers for their civic club, church, Lion's Club, etc...
they have a recipe for doing the gumbo in 5 gallon electric roasters - 8- 5gal roasters at a time
they raised MANY thousands of dollars ;)
Debbie's dad, Charlie, my FIL did all of his rouxs with corn oil
i do mine with bacon grease because i save all my bacon grease, and it's just BETTER ;)

Charlie & Hazel Gore's
5 gallon Gumbo Recipe
1# bacon, chopped up, fried
2 cups corn oil
2.1/2 cups flour
cooked to a chocolate brown roux
4 bunches green onions, chopped up
6 bell peppers, chopped up
1 celery, cut up & cooked
6 cans – Trappey's Creole tomatoes
1/2gal tomatoes crushed
1/2gal V8 juice
added in the last 30'mins
6# shrimp
1# crab meat
2 cooked chickens, skin removed, de-boned, cut up,
with broth
salt
black pepper
Tabasco sauce
Worcestershire sauce
normally cooked in a free standing 18 or 22 quart roaster = 5gal.
served over rice

Thanks - - looks like I need to get some corn oil because I use my bacon grease before it's Gumbo time
