Frittata Brunch

Ordered a potato stuffed with chopped BBQ beef the other day and out comes a potato about the size of a Mini Cooper. Had some yesterday and finishing it off today.

Sauteed onions along with potato and some corn, added the eggs and chopped beef, and then into the oven.

Added the cheese, then under the broiler to get the cheese all gooey

Hey egg, that looks darn good, is that like an omelette? Sort of??? I love omelettes. I won't hijack but I will start one on omelettes.

Not an omelette but can have all the ingredients of an omelette. It is baked instead of prepared like an omelette.
