Oven-Baked Chicken Thighs

As part of our winter indoor cooking experiments, we baked some bone-in chicken thighs in the oven. These thighs were previously rubbed & frozen (originally slated for grilling). We thawed them out, added some extra rub and put them on a rack over a water-containing pan in the oven. This way, the melting fat drips down. After about 50 minutes of baking at 375 degrees they were done:

Thighs my fave as well, bit of cheese sauce on cauli and I'm in heaven. Haven't done baked potato for a while, you just reminded me to do it soon.
