Don't know why it is but during and after the Holidays most of us end up cooking and ?creating? things out of leftovers that we hardly ever have during the year. Such was the case of this morning's breakfast omelet. The silly subject title is because of the pineapple and my Dad's old Army expression.
Ingredients:
finely chopped pineapple chunks, jalapenos, own-yawn, Christmas Ham and pepper jack
one and one half egg (think about it )
salt and pepper
mix above ingredients together and stir well
pre-heat skillet and pour mixed ingredients into hot skillet
turn heat down and sear until it can be flipped (very gently)
continue to cook that side but only long enough to cook the eggs (I usually put a lid on for a few seconds) then flip onto plate with sear side down
I topped everything with a light drizzle of roasted pineapple/habenero sauce and all I can say is
"Wowahi Mauhi" "tup:

No Sir, Sailor, but I did add a little eggbeater (aka half egg) to the mix after I beat in one egg to get it to the right consistency which basically means "pours from the bowl". I had quite a pile of chopped goodies before adding the egg(s) hi-lighted words are for Willie

Wild Bill, the half cackle berry was just some EGGbeater poured in the mix to thin it up a tad.
