New from Houston

Just found out about this forum from 2cool.

Got a smoker for Christmas. Have a big smoker we use for sausage, but this is my first 'smaller' smoker.

Master built pro.
Propane smoker.

Seasoned it this evening. Plan on getting started tomorrow!

First cook in the new smoker. Started off with some quarters for 2hrs at 275. Should have left them a little longer without a water pan to firm up the skin a little more. Little rubbery.
Had to get them out of the way for dinner! Image

Pics showed up just fine. Looks mighty tasty!

I get better skin on my chickens with higher temps. 325-350.
