Well, I've finally gotten around to frying up some gator OUP hooked me up with ( Thanks again buddy ).
Hit the fillets up with Suckle Busters Texas Gold Dust and S&P and drug Em across some flour mixed with Old Bay,Cayenne,& Cajun seasoning then into a mix of Buttermilk & Frank's Hot Sauce and back to the flour mixture before frying in the cast iron lid of the dutch oven.
The wife went with SBR Honey Mustard and I used the Jerk sauce that OUP shared with his Jerk Chicken post.
Definitely a great way to end 2016, turned out GREAT !!

It's funny you ask Bill...
It's a mix between both to be completely honest. It almost resembles chicken when you cut it, but looks like fried fish in the inside. It has a mixed taste as well but it's really really lean tho, not much fat so I imagine it's easy to overcook.

Reason I asked is I've only have had gator once. I couldn't decide then between it tasting like chicken or fish
It was good tasting either way tho.

THIS is so incredibly accurate it isn't funny. It's true with most meats like this though. Looks fantastic! I put gator in the same column as softshell turtle as far as flavor goes; kinda like chicken with a hint of fish.
