We had our first real snowfall of the season today here in the Northeast, so our thoughts went to indoor cooking. We had previously prepared some chicken thighs with a rub and decided to try them in an oven on a bed of cut-up potatoes & onions. Since potatoes need a relatively high temperature to cook, we ran the oven 400 - 450 degrees. After about an hour, everything was cooked. The rub on the thighs got a bit blackened and the potatoes were a bit greasy (sitting in the melted chicken fat), but everything tasted good.

The rub was that Brown Sugar Bourbon, and I think it'll do very well whenever we can roll out the grill again. It also tasted good cold.
