OK, I know bad pun but it's all I could come up with. :dont:
I wanted to do some Blackened Fish and Shrimp to put my Lemon Pineapple Salsa on and I really liked the combination and taste. I fired up some Kingsford Charcoal in the Kettle and put my castiron griddle on that I use for Blackening Fish and such. When blackening, it's usually just my food so it's plenty large to "Git'er Done"

This was my first time to ever cook Swai and I actually bought it by accident thinking it was a 2lbs pkg of Tilapia :roll: - - - very nice fish but very soft also so flipping must be done very carefully when grilling or blackening. I fried the Wiffy some in dredge and cornmeal and it stayed together fine and was no problem turning over while frying. My next batch will be for Tacos and then I don't care if it stays together or not.

Do you pronounce these like "swing and SWAI" :?:
Or "because I said so, that SWAI" :?:

SWAI is an Asian catfish
i like it as much as the farm raised catfish i get from Louisiana
and unfortunately it's much cheaper than the LA catfish.... not good for them
..but i normally buy the frozen tilapia fillets in the big bag at Sams

to know about tilapia. it is the "Jesus" fish. it is the primary indigenous fish in the Sea of Galilee
what Jesus and Peter (Simon) and the others that were fishermen, fished for

i cook all my fish on the Kevlar Frogmats on my grill now

thanks, Capt'n, have you ever used the grill rack that sandwiches the filet so all you have to do is turn the rack over to grill the other side? I too usually buy Tilapia but there's nothing wrong with the taste of that Swai, at least to Moi :dont:

I've never heard of Swai (not that that means anything) but I'll have to look for it in the store next time.

I have a couple of those baskets. the fish sticks to the wire
since i got the FrogMats they are all i use
i don't even turn the fillets on the FrogMat
i lay the fillets on the FrogMat in the kitchen, then just slide it off the pan onto the grill, then slide it back on the pan when the fish is finished
and the fish doesn't stick to the FrogMat. I just slide the fillet off the FrogMat onto the plate Image
then just put the FrogMat in the dishwasher

hmmm, I thought that might be the case - - - my burger rack like that also sticks - - - if you were only doing one filet, I wonder if you could fold the frog mat and flip it onto the vacant side to grill that side?

you can flip the fillet on the FrogMat, no problem, since it doesn't stick
you just don't need to.
when the top is finished the fish is cooked
the bottom is a little more done, which gives the fillet a nice texture

Tilapia can also be caught like crazy in cast nets at Calaveras lake in San Antonio. Perfect size for on a stick, over a fire!
