Platers of Goodness
I found pork loin on sale so bought a couple. I decided to dry cure and smoke with hickory.
Dry cured for 14 days. Cure was salt, brown sugar, paprika and coarse black pepper. Also added cure #1.
Tied and rubbed with more black pepper. The results were very good, sweet salty taste. Here are the finished product. CF
Fresh out of the smoker:
Let cool covered with saran wrap over night in the fridge. I like the meat cold to slice. CF
Sliced and ready to package:
I may go back and see if they are still on sale, I can see these won't last long. CF

Thanks y'all for all the kind words. I was right about one thing, they haven't lasted long. Just have two small packs left. Some even came back for seconds. But none brought meat in exchange. Maybe I should set some new rules. Bring some take some? Not really, I like it when the family comes and wants to know, what have you cooked. CF
