Good Morning
Hello, New to the Forum, and sort of new to smoking. I helped my father smoking growing up, but never had my own smoker, until NOW!!! My wife and mom decided to get me an early Christmas gift, so we will be smoking over the holidays. Question is, what should I try to smoke first? Go...

Pork butt. These are the easiest to cook and most forgiving yet produce a very good meal.

Welcome to the forum.
To add a bit of controversy - I hadn't cooked anything so easy until I did a turkey.
Look up Franklin BBQ turkey on YouTube- dude has 3 episodes that baby step you through a smoked turkey.
I did 3 in a week (1 test the weekend before, and 2 for 2 different family gatherings 3 days apart). It's simple, doesn't too much matter what kind of wood/charcoal you want to use, forgiving if you let it go a little longer, keep it simple on the rub (s&p) 1 good to go.
I also highly recommend biscuits and bacon, followed by chicken thighs. That's what I used to break in my smoker, and smoked biscuits are to die for.
Check out the search function for breaking in your new smoker.

actually....
pork butt to 195+ takes a lot of time
and you just end up with pulled pork
smoke you some St.Louis cut spare ribs for 4 hours
sauce them the last 30'mins
much more gratifying first cook
