Apple juice brined Gobbler ?

Postby bondobill » Sun Nov 20, 2016 11:30 am

I normally brine my Turkeys in a simple brine of water, Kosher salt and brown sugar.
A buddy of mine swears by brining the bird in Apple juice.
I injected some pork butts with Apple juice once 24 hours ahead of time before placing in smoker. Didn't like it. Meat had a mussy texture. Not for certain it was the Apple juice that caused it :dont:
Anyways Ive been looking up Apple juice brines on the net and it appears to be fairly popular for Turkey.
Anyone tried a Apple juice brine :?:

I am actually dry brining my bird this year. I have used apple juice in some pork chop marinade recipes though. Good stuff!

After reading this article, I don't brine anymore.

https://www.google.com/amp/www.seriouse ... ent=safari

The summary is brining dilutes flavor by adding water.

Lemon juice is acidic - don't do that. Article addresses it.

I also read the article, just got me more confused  \
But......seeing how I be ornery :rambo: .....I ended up brining the bird in concoction of Apple juice, water, kosher salt, brown sugar and threw in a couple of oranges in the brine just for 'sheets' and giggles

I'll let you'll know how it turned out

The brined bird was a hit. Moist....ok watery :laughing7: and had great flavor.
Not certain if the apple juice added thing :dont:
Still room for improvement but am getting closer. :D
