Hello from DFW

How's it going fellas? I found this forum by looking up mods for my Oklahoma joes highland. I've got it fully modded. I sealed the firebox to the smoke chamber with high temp silicone, added the gasket and latches to the door, installed a baffle and tuning plate. I ordered a charcoal basket. I also added an elbow to bring the smoke stack to grate level, but the place I ordered the baffle from said it's not needed. So I might be removing that one. Here are some pics of what I smoked last night.

Thanks man. I've been smoking/grilling for a long time, but I've always had to compromise by making whatever smoker I had work. I'm sure you can appreciate that. Its all part of what makes this so fun, working with what ya got. Well, that and the caveman instinct we have to cook with fire.

No, I didn't really do anything to the thighs. I got a bag of leg quarters because I had to go cheap. Then I removed the legs and trimmed the fat off. Most of the work was done to the drumsticks because my son is picky and doesn't like the tendons. He loved the lollipops though ;)

Thanks again guys.

So I noticed I have a very small leak on my firebox door. I'll be tackling that soon. I have left over gasket, so I might just need to order the latch. I found one really cheap on amazon(only $8)
