Hey y'all
Hey y'all, I'm from the Houston area, relatively new to smoking meat. I'm a single dad of one, and I sell life and supplemental health insurance. I had a bad tail pit several years ago that I had to let go when I moved back to Houston. In those days, I knew nothing about the art of smoking meats, how to maintain a fire, or that white smoke was bad. I never dared tackle anything larger than a rack of ribs, and occasionally got good results. I lived a solid 3 years with no smoker at all, finally giving into the itch and purchasing the crappiest smoker ever built, the $99 hunk of junk pictured. I've figured it out pretty well, as I'm able to maintain 225 at the grate for 6 to 7 hours at a time with relatively minimal babysitting now that I've got about 20 cooks under my belt. I've done briskets, both whole and with the point/flat separated, butts, ribs, and birds. Looking forward to learning from you guys and sharing the knowledge I have, however limited it may be.

and Howdy to Y"all, Jred, welcome to the addiction Forum - - - - when it comes to burning wood and cooking meats, I think you'll find these members to be the most helpful, cordial and knowledgeable on the Net so make yerself at home and post lots of pics.

Welcome! Nothing wrong with that smoker. I cooked in my first cook-off with a bolt together offset smoker bout that size.

I wouldn't judge the outcome on the $ u paid for a smoker.
U could have a 10,000$ smoker and turn out s.o.a.s...
Its all in ur approach, ull do good.

Welcome aboard Jred! I will have to say one thing about your intro post. There is no such thing as a "hunk of junk" cooker, only an inexperienced cook. You can produce quality que on a tailgate grill or a homemade hundred gallon propane tank smoker, if you take the time to learn how they tick. You've admitted yourself after some time, you got it figured. Don't be so negative about your gear, amigo! There are plenty of helpful folks here for whatever questions you may have and we're certainly happy to help those we can.

I agree with txdragon. You should search for posts about my pit called ole rusty. I absolutely love that old piece of junk. You can cook anything on anything. I have cooked out of a hole dug the ground with some expanded steel thrown over it
