How are you making fried potatoes? I remember mom used to make them and they were so good. I have tried (the way she said to make them) and they just don't turn out near as good as hers.
I use a non stick skillet, about 1 or 2 tbsp cooking oil, diced potatoes, diced onion on a med heat. After 5 mins or so, I will put about 1/4 cup water in it.
Just doesn't have much flavor like hers always did and hers were kinda mushy and browned really good.

First off I use a cast iron skillet. Instead of oil I use bacon grease ( flavor ). I add thin sliced sweet onion slices, steak seasoning or S&P. For the potatoes, I slice them instead of cubes. Cook them on a med heat, stirring and fliping them til golden brown. I don't add any water. Serve them with sausage or milk gravy.I use other skillets but the non stick ones don't seem to do as well.

I have done water the last 3 or 4 times. It does seem to halp some. The taters seem more moist this way.
