I have used this pre marinating suggestion for years and am very pleased with the taste and crispness that it provides the shrimp.
Recipe comes from Pat Huval in Henderson, Louisiana via Tony's Cookbook:
Ingredients:
1 pound fresh shrimp
1 small can of Carnation milk
2 eggs
1 tblsp Calumet baking powder
2 tblsp vinegar (I prefer to use only 1 tblsp)
1 cup flour (I use a mix of Corn Flour and Wheat Flour)
She recommends Tony's Creole Seasoning here but I use Slap Yo Mama (or what ever you like)
Directions:
Make a mixture of eggs, milk, baking powder and vinegar. Marinate shrimp for at least 1 hour in the mixture. Remove, season lightly, dip in flour and fry in 380 degree fat/oil until golden brown (no longer)
