Hoochie Mama Chuck

Postby Cliff H. » Thu Feb 01, 2007 9:32 am

I normally do not post the same cook on two forums but this one is special because I am using a sample of one of Gators seasonigs.

I am doing one "Hoochie Mama" seasoned chuck and one "Wolfe Rub Bold" chuck today. They are abut 2.5 lbs each and I expcet them to take all day to cook. Chucks get foiled at 165 and taken to around 195 but this time I am going to do the fork test no matter what the thermometers say!

The chucks turned out a bit dry, but that had nothing to do with the seasonings. I was concerned that the flavor from the sample would be to strong because of the salt content and the time it normally takes to smoke a chuck roast but the flavor was great. Not overpowering at all.

The WRB had a very good flavor as well. Two totally different flavors and both were excellent.

Thanks for the sample Gator, I will be using this seasoning again.

I demand a recount. Hanging chads on Chuck  Seriously, thanks for the post (and the thumb nails, these boards are getting hung up on band width) 8)

I'd do a side by side using Sucklebusters, but I'd have to put it up against my rub, and that wouldn't be fair :D cause the Sheriff is a profession and I'm just a deputy.

:!: Think theres a song there.
