Axis summer sausage

Got to harvest an Axis doe last weekend. Got summer sausage in the works now. 50# total, going to ferment in the garage tonight and on the smoker tomorrow!

No real reason, Matt, except "been there and done that" - - - I was ADDICTED BIG TIME and thought that Opening Day should have been declared a National Holiday. When I got out of the Hobby, I was harvesting 5 deer a year plus two Rio Grandes and never needed to buy meat at the Grocery Store. :laughing7: :D  Of course my Sons and Grand Kids are addicted now so I never want for the taste. - - didn't mean to Hi-jack your Thread :salut:

Cooked a patty today to test seasoning, was great. 20# axis, 20# pork and 10# brisket, can't wait to get some smoke to it.
