Concession Trailer and Pit Trailer Question

I have a question for which i could not find an easy answer online:

If i wanted to start a bbq concession trailer business, does the pit need to be attached or mounted on the trailer in some way, or is it acceptable to have a concession trailer where food is prepped and sold, and a separate pit trailer where the bbq is cooked?

Check with your local HD. I am pretty sure it can be cooked off site but the cook trailer and commissary need to be inspected before hand. You will also need proper warmers and such. Kinda like BBQ restaurants selling at events. It works for them because they are licensed and inspected in all aspects to do so.

I don't know the HD codes but from what I understand if you have an offsite cooking station and another site where you serve you'll have to meet the same regulations (sanitary, etc) at both which essentially doubles your cost in the sanitary department.
