offset with a cabinet smoker??

what purpose does the cabinet next to an offset serve? is it for more cooking area with temps similar to those in the horizontal chamber?

i've seen some models with sausage hangers in them, but from what i think i understand is that sausage is cooked at a lower temp than your usual fare...

so what exactly do people use the cabinet for?

Low temp smoking -- jerky, fish, even cheese. You can get cooking temps in the cabinet around 225-250F.

If you don't have tuning plates in the pit the cabinet will most likely always lag behind the main chamber in temps. With tuning plates you can get the cabinet to cook at the same temp as the main chamber, which increases your cooking capacity.

then i don't suppose there are reverse flow smokers with cabinets, are there?

Shirley Fabrication & Johnson Custom pits both do reverse flows with cabinets. My understanding is their cabinets are more warmers.

The exception being Shirley has an option to use the cabinet as a vertical smoker by pulling a damper and using a heat diffuser.

I've seen both in person. Both are very well made.

I am not sure about that, I have seen reverse flow smokers with a cabinet sitting on top of the fire box, but the exhaust stack exits before it went into the cabinet. But I guess at that point it is a warming box. But I really don't have any history with reverse flow smokers myself. I have an offset with the smoke box/cabinet that is tuned to cook even. There are plenty of qualified people on here that will weigh in with what they know and how those reverse flows work though.

Are you talking about a vertical chamber on the opposite end of the firebox on an offset or a warmer on top the firebox that can act as a cooker?

In my opinion that is not a warmer but a vertical smoker. For the most part you can expect 50° to 75° difference in the two chambers.

A lot depends on how the two chambers are joined some times plates hurt you more than help you where a vertical is concerned. Personally I have never seen an upright run at the same temps as the horizontal chamber even with plates. The closest I have seen is one I helped repair and we got it to within 40° difference in the two chambers which was a vast improvement to what the guy had before we started. The horizontal chamber almost always runs hotter than the upright.

I have a Klose that runs dead nuts even all the way across 9 1/2 feet. A 7ft main chamber, and a 30 x 30 x 42 high smoke box. It also has a baffle system where the 2 chambers meet where you can change the air flow and the smoke box will lag behind a little bit. But I know what you are saying, I had never see one cook even all the way across either. When I bought it they told me it absolutely would, and I didn't believe them. And was willing to accept it even if it didn't. I asked them to let me know when they were going to tune it so I could be there. They called me when they fired it up for the first time and tuned it. I don't have the pictures on this laptop, but I do have them from the first fire that was put in the box, of each temp gauge all the way across sitting on 250. So I do understand your skepticism, as I was the same way. But I have one, and I am sure that all the Klose pits out there that are tuned probably run the same way or similar, and I would suspect that the Gator pits may as well also.
