Bacon again.

Been out of bacon for a while, Just ordered some pork belly from one of our vendors. They come 4 to a box so I now have 65# pork belly. Got two sides finished. Dry cured for 14 days with brown sugar, rubbed with black pepper and smoked with hickory.CF :D

I was going to comment on the fact that I never see pork bellies in HEB, then you gave the secret away, they must be ordered....
Great looking bacon, gonna try that some day, will definitely have a second fridge though, maybe a third.. :D

I have decided to dip my toe into making my own bacon. I just got myself a nice Food Saver and good slicing knife. Now I just have to buy a belly and learn how to make bacon turn out like that! It looks absolutely perfect!

Let me know where you find good bellies in our area. I found some at Costco earlier last year. My last visit there they had "belly chunks" which looking like the scrap pieces to me.

I spoke to a butcher at Costco a few weeks back and he said they always have bellies and they are usually around 12-15 lbs each and I believe they ran about $3.50 a lb. I'm going to try and talk them into cutting off the skin before I buy it so I'm not wasting money on something I'm just going to throw away.
