10 lbs. of cheddar jalapeno sausage just off of the smoker and given an ice bath
30 lbs. of cabbage becoming sauerkraut. Shredding 30 lb. of cabbage becomes a bit of a drudge, but I keep thinking of the end product. It is hard to beat a good sausage and kraut.

Oh man do I love kraut simmered in some good beer just before blanketing a good sausage sammich !!!

Looks good...
Here's a family favorite.
Drain kraut in a colander (Rinse if you're going to feed folks who get lock jaw from sour stuff)
Kraut in pot add 1/2 to 1 cup white wine (we always used Rhine wine.....German thing)
Add sausages whole or sliced your choice. (also try 1" cubed precooked pork like leftover grilled pork chops)
Caraway seed (optional 'pends on the crowd)
Heat and enjoy.
This will surprise some folks especially if they don't normally like kraut.

I love Kraut on Dogs and Reubens and I'm sure gonna try that one - - I already wash my can or bottle Kraut so this sounds interesting

You mean this? I Googled and this was the first recipe, had to laugh....25 ingredients!! I'll bet I have all but the cabbage and it does sound good. The recipes vary all over the place but all include kraut and kielbasa I think I'll skip those that include prunes. Might mention since a lot of the bigos recipes include apples that apples is a optional ingredient in the family recipe I posted but I never liked them.
