Smoked Delta Style Pork Tamale Sausage
Had a friend been working on me about this. So here we go. Got a 5# test batch all stuffed and drying a bit before the smoker.

Hoping to recreate the taste of the Mississippi Delta Hot Tamales. Different from the typical Tex/Mex tamales.

Well, it's out of the water bath and drying a bit before a night in the fridge. Sample tomorrow.

Mark, if I may ask, do you use the same type casing on all of your awesome sausage links or do you change depending on the type/recipe

It's pretty much all hog casings, diameter changes by what I want in finished product.

Well, the finished product didn't pass muster. Taste was good, had some heat, but the consistency I felt was a little mealy. So, on to try 3.1.
