Competition Kosher Brisket

I'm cooking in a Kosher BBQ Competition this weekend in San Antonio. Wondering if you have any advice on smoking Kosher briskets and chicken? I cooked in this event last year and my brisket was drier than normal (compared to most cookoffs) and we didn't place. I didn't add any extra salt by the way. I did place third in yardbird but still looking for suggestions. :dont:

I just read the flyer and rules. The only advice I can give is just hope you get a decent piece of meat. Good luck and let us know how you end up. :D

Thanks guys, if you come out Sunday come by the Comal-Q trailer and say hello. We are allowed to pick our meats from the selection provided, I just hope there are some competition quality briskets. I assume they will all be the same grade, so you never know for sure.

I have a co-worker cooking in this competition this weekend as well. They won last year as first timers so I was thinking of heading out tomorrow and seeing how he does this year. Good luck!
