Fresh Jalapeno/Cheddar Cheese Sausage

Made up 30# of fresh jalapeno/cheese sausage. 25# of pork, 2.5# of jalapenos, and 2.5# of cheddar cheese. Turned out great. Very moist when smoked at 250 degrees for about 45 minutes. Also did a patty with the mix, and some deep fried sausage balls.

It was Rebel Smoked Sausage mix with jalapenos and cheddar cheese added and stuffed into hog casings.

Got back from me Spring BBQ Tour the middle of last month, and been working on fresh sausages. Spent some time in the Hill Country. Was in Wemberly with Operation BBQ Relief. What a great group helping out in bad situations. Glad to hear all is good with you.

Operation BBQ Relief is a wonderful way for people to give back to communities in need, but it's not the only way.
