I just visited Lone Star Grillz, Pits By JJ, Klose, and Gator Pits.
The fit and finish on all of the smokers is really nice.

I saw an adjustable damper between the fire box and the cooking chamber on the smokers that Pits By JJ builds to control the heat going to the cooking chamber.
This is a unique feature to this builder and I was wondering if this is really useful or even desirable for the end user to be able to adjust the opening between the firebox and the cooking chamber ?
Any insights are appreciated.

I love Jose's cookers his fit and finish is second to none but the baffle between the firebox and cooking chamber is a useless add on in my opinion.
Some folks may get use out of it, but I have never seen a need for one on my cookers.

They're not cheap, but David Klose is practically Yoda where pits are concerned. That having been said, I know very little about the other manufacturers and I'm watching pretty closely for the feedback. So thanks for the thread!

The visit with Klose was a lot of fun.
He builds some serious steel and has some great things to see.

Well, after my pit builder tour and being thourghly impressed with the quality of the smokers and the business owners I got my feet back on the ground and decided I cannot justify the price of a big boy smoker.
Today I joined the ranks of WSM owners when I picked up a 22" model at Cabala's in Allen, TX.
Broke it in with a couple of chickens.
