New day, so new sausage start. Great recipe that's a takeoff of Gunny's recipe.

The Gunny is a true sausage king. We have not heard from him in a while, hope all is well.

That he is. Last I heard from him he was back in SW Missouri and still having back issues. I too hope he is well.

I have made gunny's jalapeño cheese, its mighty good also.
Mark, I love the New Mexico Chile. Have never used any in sausage. CF :D

There are several grocery stores here that roast both green chiles and jalapenos daily. When Hatches are available, I'll buy a bunch and freeze them.

Still in the cold smoker, and then it will go to the hot smoker. Happy so far.
I'm just making up for everything I couldn't do while I had a real job.
