Third Attempt at All Beef Texas Hot Guts
I wasn't happy with the last batch, so threw it out. Went back and tweaked the recipe, and BINGO. Very happy now, and this is what I got.

The last batch had a sour taste to it. But this batch is what I'm looking for.

I am loving the outside and the inside color. I really like to see that red juice. Wish I had one rolled up in a slice of bread. Makes one happy. CF

In a word, no. Now with that being said, I more than happy in discussing the process I go through. I will also say it is a very simple mix. But the amount of time and money invested in this, I don't think I'm ready to let it go.
If you want to come up with a Hot Gut recipe you like, there is no one recipe, get a 10# tube of 80/20 chuck, and using sound sausage making principles. Start making 1-2 pound batches. Keep adjusting your recipe 1 ingredient at a time until you get what you're happy with.

I've been working on it the last 5 years and just can't get it quite right. My last tweak was the addition of a little anise and that helped some. But I'm still missing that flavor that hits the back of the jaw. Thanks anyways.
