Good luck JM. KAM we're not gonna make the Fiesta again this year, gotta do our local, was reserve last year cause I'm not a good steak cooker and it counts at this one. Been practicing so hope it pays off this time.

K.a.m. I am new to comp cooking and was thinking about that one as well. Torn between that one and the state cookoff in new mexico just because my son wants to cook in kids q. Any advice in flavor profile in new mexico?

stephen2323, travel wise that is a wide spread between New Mexico and Breaux bridge Louisiana.
As far as flavor profiles for New Mexico I haven't a clue. I do not change my flavors when traveling, the judges either like what we always cook or not. :)

Breaux Bridge, LA for us next weekend as well. It'll be good to cook with some of our Louisiana brethren again! And of course KAM too!

KAM. From googling the two it appears they are both 6 1/2 hours from DFW. If there was one closer then that would def make my decision easier.

Worchester, evoo, lawrys season salt, McCormick grill mates spicy and top it with a Chardonnay butter, turn it in, go get your trophy!

Stephen, if you're looking for a comp this weekend that's closer to the metroplex look into the only Limey spoke of the other day in Penelope, its just over and hour away from Fort Worth. I know Limey, Big Ed, and myself will be there as I'm sure some others from the board.

That looks like a lot better deal for me. As long as I can manage it with work I will see yall there. I'm an insurance adjuster and wok has picked up after last nights storms but will def try and swing it.

Dr Smoke had a pretty good outing at this Cookoff. This Cookoff has always been our Achilles heel of cookoffs. The past 2 years we haven't placed top 10 in any category and sometimes not even finals tables. It all came together pretty well for us this time. We placed:
5th fajitas
1st chefs choice
9th chicken
9th ribs
And 1st in the big kahuna-brisket.
Been on 3 Cookoff slump in brisket and it's lost us some GCs also. From the minute I cut into it, she wa juicy as all get out! from the first taste, to when we got it in the box, I was very confident it was top 3. I'm hoping my brisket is back.....There is always next year but we were happy with our performance. Made some $$$$ and met some great cookers.
Also got some custom stainless shelving work done to the trailer
