Fast or slow

Newbie here, been to three comps and was wandering if it was better to cook low and slow or hot and fast

Low and slow if you want to stay up all night. Hot and fast if you want to sleep. I myself like my sleep at night.

That's not true!! I get a lot of sleep and my pit runs under 250* :dont:

250, slow and low here. Still get a few hours sleep thanks to a charcoal basket.

Low and slow, I don't get a lot of sleep, but enough to function normally. I work nights anyways to its kinda normal for me. Plus, staying up all night means you get to drink beer and play games, and meet new ppl

Low and slow is the way to go for me too. Besides, sleep is way overrated!

This is a very subjective question based on meat type and personal preference.
There is no right or wrong answer ... did I mention there should be plenty of reading material in the archives??? This is most likely the most commonly asked question on this forum.

I do not compete but if I did I would cook the way I do now Hot & Fast

Because there is no solid evidence as to which is better, my advice is cook which ever works best for you it is just that simple. :wink:
The truth is if you are comfortable with either method and your product shows it then you have found what works best for you. Why would you want to fight and struggle with a method that does not show off what you can do.
I will say that if you like low & slow it is a real plus to know how fire up your cooker to hot & fast temps and get it done if need be.
These are just my thoughts. :D

As a one man team I can tell you that hot and fast works for me. I cooked low and slow for a while but I love me some sleep. If you want to cook hot and fast try just a flat. I cooked angus flats from sam's for a while and they cook fairly quick. If you get good you can cook hot and fast for 2 1/2 hrs uncovered, 1 1/2 wrapped and then covered in an ice chest for 4 hrs. I do it this way and I have it timed where my ribs turn in and the brisket is already resting. That gives me plenty of time to take a shower and grab a nap. If you have a few team members then I guess low n slow isn't a problem because you can get the low man on the totem pole to stay awake and keep watch.

Hott and fast for us. 1.5 hr chicken, 2.5 hr ribs and 6 hr brisket.
Brisket hits the cooker at 6am finished by 1130-12, in the cambro till turn in of 2-3pm.

45 minutes to 1 hour ckn; 3.5 to 4 hour ribs; 5 hour briskets, usually light my fire at 6 to 6:30 and always make my turn ins.
